For Whitney Bauer, baking has always been about more than creating delicious treats. It's about bringing people together and serving the community one customer at a time. What began as a passion during high school and college has grown into 308 Bakery, a welcoming gathering place in Holdrege's former Dairy Queen building.

Originally from Elm Creek, Whitney has long had family ties to Holdrege. Her love for baking began while working at a local bakery during high school. While attending college in Hastings, friends and customers began requesting custom orders, giving her the confidence to begin baking professionally.

She later launched a baking trailer through Nebraska's Cottage Food program and spent time at the Holdrege Farmers Market, the Hastings Makers Market, and other local events. Those experiences helped introduce her baking to communities across the area while building relationships that continue today.

When the former Dairy Queen building became available, Whitney saw an opportunity to create the bakery she had always envisioned. Renovating the space into a warm and inviting bakery became a true family project. Although Whitney operates the bakery herself, countless hours of work alongside her family transformed the building into a place where customers can relax, gather with friends, and enjoy homemade baked goods.

Community support has been part of the journey from the very beginning. Even before opening the storefront, 308 Bakery provided cookies for several Holdrege Area Chamber ribbon cuttings, becoming a familiar face at local celebrations. Whitney has also participated in community events such as the Holdrege Midsummer Festival, where her homemade rye bread quickly became a customer favorite.


Something New Every Visit: Whitney enjoys keeping the bakery case fresh with rotating desserts and baked goods, giving customers the opportunity to discover new favorites each time they stop in.

Customer Favorites: The gluten-free Monster Cookie Bar has become one of the bakery's most requested treats, while the homemade rye bread has earned praise for bringing back memories of family recipes and local traditions.

Built Around Relationships: Whitney welcomes customer suggestions and enjoys creating special requests whenever possible, making each visit a personal experience rather than simply a transaction.

At 308 Bakery, relationships are just as important as recipes. Customers are encouraged to stay awhile, visit with friends, and enjoy a comfortable atmosphere where conversations often turn into stories about family, neighbors, and the Holdrege community.

Whitney believes a bakery should feel personal. She enjoys getting to know her customers, listening to their stories, and creating a space where everyone feels welcome. That personal approach is reflected in every detail of the business.

As Whitney shares, "If there's something you want to do, don't let people tell you you can't do it. There are going to be opportunities and doors that open. You just have to go for it, trust that you're prepared, and believe you have the skills and capabilities to do it."
